Gluten free tartlets with strawberries - Tortine senza glutine con le fragole - Bezglutenske tortice s jagodama



This is the story about a kettle full of wild strawberries and the forest near to my grandparent's house. I still remember the perfume of ripe wild strawberries fluttering in the air and the light green kettle hung on my grandpa's belt. We often went for a walk in the forest, we only needed to cross the road and the big and shadowy forest embraced us in all its beauty. And we walked and walked until the stream, we crossed the stream and continued till the large meadow in the heart of the forest. The grass was so green and the flowers so white and yellow. The air was hot and mild wind was moving rhythmically big oak's leafs . Beneath these big trees and all around in the meadow small, bright, red fruits were waiting for us...Ohhh what a joy, ohhh what a splendor, I will never forget these feelings. I craved all these tiny fruit and suddenly I found myself with the mouth full of sweet strawberry flavour! I couldn't go back home walking, I was too tired and too sated. My grandpa used to carry me on his strong and scrawny shoulders and I was almost touching first tree branches with my head. Grandma was waiting for us on on the doorstep and lukewarm smell of fresh baked bread was tempting me. The bread was ready to spread on it some fresh strawberry mash.
I stil adore strawberries and the sensations of lights and shadows I've met in that forest.  Forest is the place I'm searching for wherever I am.





GLUTEN FREE TARTLETS WITH STRAWBERRIES

(for 4 large tartlets of 9 cm diameter)

2 eggs
a pinch of salt
80 gr of brown cane sugar
100 gr of whole milk yogurt (unsweetened)
50 gr of olive oil (not extra virgin!)
150 gr of fine corn flour
50 gr of rise flour
1 teaspoon of baking powder
strawberries cut in small cubes

For the sauce:
100 gr strawberries cut in small cubes
1-2 tablespoonsof brown cane sugar

Oil with pastry brush and flour with corn flour baking tins and preheat the oven to 180°C.
Cut strawberries into small cubes and leave them on the paper towel to absorb the juice coming out from the fruits.
Beat egg whites with a pinch of salt. When the egg whites become swollen and firm add sugar and continue mixing to incorporate all sugar. Add egg yolks (one by one) and continue mixing until the batter becomes clear and swollen.
Stir in with the mixer first yogurt and then olive oil little-by little. Lastly add the mixture of flours and baking powder. Mix well all together. The batter should be little dense and homogeneous.
Pour the batter into baking tins leaving 1,5 cm free space in each tin. Add some cut strawberries in each tin and push them gently into the batter (the batter will be dense and the fruits would stay on top of it).
Bake in preheated oven for 25-30 minutes until the surface become golden brown (baking time depends on the oven, test the cake with a toothpick if baked).
Remove the tartlets from the baking tins and allow to cool on cake grate.

Decorate the tartlets with strawberry sauce. Simmer strawberries with sugar on low heat for 5-10 minutes to obtain dense sauce with pieces of fruit. Pour warm sauce over the tartlets to absorb the fruit syrup.


TORTINE SENZA GLUTINE CON LE FRAGOLE

(per 4 tortine grandi del diametro 9cm)

2 uova
un pizzico di sale
80 gr di zucchero di canna
100 gr di yogurt bianco intero
50 gr di olio di oliva (no extravergine!)
150 gr di farina di mais fine tipo "fioretto"
50 gr di farina di riso
1 cucchiaino di lievito per dolci
fragole tagliate a cubetti

Per la salsa:
100 gr di fragole tagliate a cubetti
1-2 cucchiai di zucchero di canna

Oliare col pennello da cucina le tortiere 
e infarinarle con la farina di mais. Preriscaldare il forno a 180°C.
Tagliare le fragole a cubetti e lasciarli su un tovagliolo di carta per far si che la carta assorba tutto il succo che fuoriesce dalla frutta.
Montare gli albumi con un pizzico di sale. Quando gli albumi diventeranno gonfi i sodi aggiungere lo zucchero e continuare a lavorare con le fruste per incorporare bene lo zucchero. Aggiungere i tuorli d'uovo (uno alla volta) e continuare a lavorare l'impasto fino a quando diventerà chiaro e gonfio.
Lavorando sempre con le fruste incorporare lo yogurt e poi versare a filo l'olio di oliva continuando a mixare. Infine aggiungere nell'impasto la miscela di farine e il lievito per dolci. Mescolare bene tutto insieme per ottenere un'impasto denso e omogeneo.
Versare l'impasto nelle tortiere lasciano  lo spazio libero di circa 1,5cm sotto il bordo delle tortiere. Sistemare le fragole sulla superficie delle tortine e spingerle leggermente nell'impasto (l'impasto è denso e altrimenti le fragole rimarrebbero in superficie). Cuocere le tortine nel forno preriscaldato per 25-30 minuti fino a quando la superficie non diventa dorata (il tempo di cottura dipende dal forno, fare la prova con uno stecchino).
Togliere le tortine dagli stampi e farle raffreddare sulla griglia per dolci.

Guarnire le tortine con la salsa di fragole. Cuocere a fuoco lento le fragole con lo zucchero per 5-10 minuti per ottenere una salsa densa con pezzetti di frutta. Versare la salsa ancora calda sulle tortine affinché assorbono lo sciroppo di frutta.



BEZGLUTENSKE TORTICE S JAGODAMA

(za 4 velike tortice promjera 9cm)
2 jaja
prstohvat soli
80 gr smeđeg šećera od trske
50 gr maslinovog ulja (ne extra djevičanskog!)
100 gr punomasnog jogurta
150 gr finog kukuruznog brašna
1 žličica praška za pecivo
jagode narezane na kockice

Za salsu:
100 gr jagoda narezanih na kockice
1-2 žlice smeđeg šećera od trske

Nauljiti (kuharskim kistom) i pobrašniti kukuruznim brašnom kalupe za tortice, te zagrijte pećnicu na 180° C. 
Narezati jagode na kockice i ostaviti ih na papirnatoj salveti da papir upije sav sok koji iscuri iz voća.
Tući bjelanjke s prstohvatom soli. Kad se bjelanjci pretvore u čvrsti snijeg dodati šećer i nastaviti mutiti mikserom da se šećer dobro umuti u snijeg. Dodati žumanjke (jedno po jedno) i nastaviti miksati da dobijete jednoličnu i bogatu masu.
Potom u smjesu mikserom umutiti najprije jogurt, pa polagano dodavati maslinovo ulje uz neprekidno miksanje. Na kraju dodati u smjesu mješavinu brašna i prašak za pecivo. Sve skupa dobro izmješati da bi dobili glatku i homogenu smjesu.
Uliti smjesu u kalupe za tortice do 1,5 cm niže od ruba kalupa. Po površini smjese poslagati jagode i lagano ih utisnuti u smjesu (smjesa je gusta, pa bi inače jagode ostale na površini).
Peći u zagrijanoj pećnici oko 25-30 minuta dok površina ne postane zlatno smeđe boje (vrijeme pečenja ovisi o pećnici, čačkalicom probajte da li je kolač pečen).
Izvaditi tortice iz kalupa i ostativi ih da se ohlade na rešetci.

Ukrasiti tortice salsom od jagoda. Pirjati jagode i šećer na laganoj vatri 5-10 minuta da bi dobili finu sirupastu salsu s komadićima voća. Preliti toplu salsu po površini svake tortice kako bi one upile voćni sirup.
